Pancake Day: Fluffy Pancake Recipe

So, after umming for ages about whether I should do a pancake recipe or not, I just thought why the hell not (ha). I am so so excited for Pancake Day because I LOVE pancakes so so much. Unfortunately for me.. I can’t wake up to make yummy pancakes for breakfast as I leave for work at 7:30am every morning.. and despite me loving pancakes A LOT, I don’t fancy waking up earlier than I need to for them (I think I love my sleep more, hehe). I’ll definitely be making them once I get home though 🙂

 

So… when it comes to pancakes I definitely have more of a sweet tooth (I just don’t understand savoury pancakes).. so I am always drawn to sweet pancake recipes. Now .. let me tell you I have tried my fair share of pancake recipes BUT I have finally found my perfect one! It’s all about trial and error (plus LOTS of practise) when making the perfect pancake… so don’t worry if you can’t get it right the first time!

 

So guys .. I’m going to share the best recipe I have found for the fluffiest, softest sweet pancakes EVER. All credit goes to The Sweetest Journey – thank you SO MUCH for the recipe!

  

Makes around 20-25 pancakes (depending on how big you make them) – you can half the recipe if you’re not making that many! I made them for all the family so needed plenty.

3 cups of flour

6 tablespoons of sugar

3 teaspoons of baking powder

1 teaspoon of salt

4 eggs

2 cups of milk

4 tablespoons of melted butter

2 teaspoons of vanilla extract

Method

So guys .. the usual .. add all the dry ingredients into a bowl and mix together! TIP: I like to sift in my flour.. it means there are no unnecessary lumps!

Next, beat the eggs together, and add the milk, melted butter & vanilla extract and whisk together

Make a well in the dry ingredients and slowly add the wet ingredients. Use a spatula to mix together (don’t mix too much as you want to keep as much air in!). Also – sifting the flour earlier means there shouldn’t be too many lumps. TIP: if your mixture is too thick, add a splash of milk.

Now – this is the part where most people struggle. You need a non-stick pan (I use a Tefal one – it’s the BEST).. and also use a ladle to measure out your mixture (so you don’t get too much) and I find this also helps them stay round.

SO – I thought I’d be helpful to give you step by step instructions on how I make each of them perfectly golden and fluffy.

  • Have your pan on low/medium heat and leave for a minute or so to get to the correct temperature
  • Put some melted better/cooking spray on you pan (this is what gives them that golden colour)
  • Use half a ladle of mixture and pour it onto the pan.
  • LEAVE it be for a minute, or until you notice bubbles on the top and the edges starting to rise. This shouldn’t take longer than 2 minutes (any longer and they’ll burn!)
  • Flip the pancake and leave for another minute (maximum minute and a half)
  • I like to keep them in the oven once done (one slow heat) so they stay warm whilst I prepare all my others)

And that’s it guys! Then.. go crazy with the toppings. My fave: Nutella and strawberries 🙂

Hiya lovelies!♥

IT IS THE LONG EASTER WEEKEND WOOP! Now… I would be EVEN more excited for this if I had not already been off for the whole week (haha!). Do you have any plans for the long weekend? All I know is that the weather is going to be poopy where I am (grr!).. So we will just have to see how the weekend pans out! ALSO… YES to the clocks changing… this means MORE DAYLIGHT WOOP! Anyways darlings… I know you have probably seen SO many Easter themed posts.. SO I wanted to mix it up slightly…. so I decided to post what MY EASTER ESSENTIALS ARE! Now.. by this I mean little things that I feel EVERYBODY associates with Easter time!! This includes Easter treats & beauty bits too! So angels.. let’s have a quick look!!!!

I think almost every single person must have made these AT LEAST ONCE!! They are literally the EASIEST thing to make and look SO SO CUTE!! How nostalgic do these make you feel?! They would ALWAYS be in every baking fair/sale at school AND I am sure you and your mum/older siblings would always make them around Easter time!

All you need for these:

  • 200g Cornflakes
  • 75g Butter
  • 200g Milk Chocolate
  • 4 tbsp Golden Syrup
  • Mini Eggs

Method:

Melt all the ingredients. Mix in with the cornflakes and put into cupcake cases. Top with 2 (or more!) mini eggs. Leave to set.. and enjoy!!

There is just something ABOUT pastels that just MEANS Spring time is near!!! I absolutely LOVE this pastel pink colour from Barry M for spring/Easter inspired nails! Also.. nothing like a pop of orange to show you are well and truly ready for the warmer months! This beautiful colour is by Ciate London Olivia Palermo range in the colour “My Haute Vacation Coral” It would look SO beautiful on your toes too! So.. if you are lucky enough to get some sun on the Bank Holiday… pull out your sandals from the back of your wardrobe, give yourself a well deserved (and needed!) pedicure.. and rock bright nails! I have been so so impressed with the Lush Easter range this year.. HOW ADORABLE ARE THE BUNCH OF CARROTS!!!! I was lucky enough to be invited to a Lush event (full post will be coming soon!).. and just looking at the range they have.. I LOVED EVERY SINGLE THING!!! Right guys.. the two types of eggs I am talking about are: Chocolate Eggs and Lush Bath Bomb Eggs. Firstly… it would not even be Easter time if you didn’t demolish at least 1 bag of mini eggs (all by yourself may I add – no sharing required). AND… all of you are allowed to have ONE GIANT EASTER EGG!  ALSO… for all us Lush/bath lovers… you have a LOVELY selection of easter egg bath bombs to choose from! From the GLITTERY AS ANYTHING Golden Egg (which is an absolute BEAUTY.. AND it smells like toffee… YUM)… to the beautiful hot pink Fluffy Egg (which smells JUST like snow fairy!!)… AND the HUGE bath bombs Humpty Dumpty and Which Came First?

Quick Review of Golden Egg♥

I used this beauty in the bath recently.. so thought I would give you a SUPER QUICK REVIEW! Firstly.. if you do not like glittery baths.. you are best avoiding this as it is SO GLITTERY! I LOVE THEM THOUGH.. so was so excited to use this!! Once it is in the bath.. the water is FILLED with glitter.. and it starts to fizz away slowly. The scent is probably my FAVOURITE thing about it.. it smells like toffee/caramel/chocolate.. SO YUMMY!! Once the Golden Egg has finished melting.. you are left with the the most glittery, beautiful smelling, silkiest bath water EVER! I DID not want to leave my bath! The scent lasts on your skin for so long after you get out too.. which is FAB! I also did not need to moisturize after.. which is always a plus!

⋅How to: Have the BEST start to 2016⋅

Hey loves!

This post LITERALLY just came into my head when I saw a few tweets about how sad it was that Christmas was over and it was now time to prepare for the most depressing month (January).. more specifically “Blue Monday”… and I just instantly thought what better than to have blog post to try and get us all to feel more positive for 2016! So … I thought I would give you a few tips/some advice on how you can have a GREAT start to the year and also help you overcome those post-Christmas blues!

Remember … Don’t Feel Guilty♥

Now, I know the biggest thing most of us do is eat WAY WAY too much around Christmas time (I am right aren’t I?)… and most of us feel bad for indulging so much. Hey – don’t feel guilty, you deserve it, I am sure we have all had a tough year with school/work/family/friend/relationship struggles… so you are allowed to treat yourself! The biggest thing is to have a positive mindset when it comes to after Christmas time .. this will help us focus more on bettering, not punishing ourselves for those extra treats we had 😛

Take Long Walks♥

I LOVE taking long walks especially at this time of year … and it is such a good way to clear your head and really get you focused on what you want to achieve in the new year! Trust me, get up nice and early and find a nice country walk to go on (whether that is on your own/with a family member/friend/dog)… and just spend however long you want clearing your head, keeping fit (walking is a form of exercise loves – bonus!), and just enjoying time away from all the craziness of post-Christmas!

Get Organized♥

I am the biggest fan of being organized… and trust me this will REALLY get you feeling happy for the new year! You want to go out and buy yourself a diary (a separate one for your “actual life” and then your “blogging world”)… and start PLANNING! I also recommend getting some funky stationary which is to be used specifically for your diaries.. I don’t know about you but this makes me very happy and excited! 😀

Reflect Back♥

Christmas may now be over and we are going back into January .. but now is your opportunity to look back on all the amazing things that happened in 2015.. and I know that EVERYONE must have at least ONE time in the past year where they felt happy. One way to do this is to make a scrap book/Facebook album highlighting your top moments of the past year. This will also really help you focus on making 2016 JUST AS GOOD!

Focus on making ONE THING BETTER♥

Hey .. I know so many of you are thinking up new years resolutions .. but I am the type of person who tries to make one thing better at a time, rather than lots of different things! So, whether that is focusing on bettering your blog/social media, relationships with friends/family members, your career… try not to stress yourself out with too many things on your plate. If you are not happy with your blog… spend however long updating it until it is how you want it. Not happy with your job?… Take time out to find a new one/move departments (I know it is not always this easy though … I spent 2 years in a job I didn’t like because I needed the income .. try focus on the positives.. which for me was the girls I worked with .. and when you feel ready .. go for the change) Missing your friends?… Book a weekend off from everything to spend quality time with them. Rather than trying to improve many aspects of your life at once, focus on one thing at a time… that way you know you have finished something as best as you can… and it is not playing on your mind whilst you are trying to work on something else in your life.

Plan Exciting Things In Advance♥

Whether this is a holiday/weekend away.. even a night out with your friends.. If you book this before the new year starts, it means you already have SOMETHING exciting to look forward to! This could even be a sleepover (as I know a lot of us do not have much to spend in the month of January).. so get all your girls together for a night and have a PAMPER evening .. read my post here where you can see how to have the perfect one!

Eat Yourself Happy!♥

Guess what guys .. there are healthy snacks that you can have after all those treats that will STILL satisfy your cravings as well as being good for you! We all know chocolate boosts your serotonin levels (dark chocolate is even better).. but other foods that do include bananas, popcorn, any type of fruit (my fave being clementines at this time of year), almonds and green tea (although this is a drink hehe!). Also, there is nothing wrong with some chocolate if you need cheering up .. we all know how much it helps!

And Remember.. It Will Be Spring/Summer Soon!♥

This means lighter days, florals, cold drinks, warm evenings, Bank Holiday Weekends, BBQ’S,… ohhh the list is endless!!! Make it your aim to make Summer 2016 ONE OF THE BEST!

Ok loves.. I literally feel like I could go on forever with this post .. But I think I must stop! I really hope this helps you go into the new year with a positive mindset, and also cheers you up if you have Christmas blues! I liked writing up this post too … I am definitely wanting to do more lifestyle/advice posts for the new year .. ♥November Faves!♥

Happy Sunday lovelies!

How has your weekend been? Well.. all I can say is that Storm Desmond (those of you in the UK will KNOW about this!) has definitely been causing many issues – the weather has just been awful. Strong winds, lots of rain … it has just been a nightmare! I really want to take some outfit pictures today – let’s see how kind the storm will be to me (probably not much to be fair .. boo!)

Anyway …. This post is going to be my November FAVES .. I know what you guys are already thinking .. it is a little but late .. but better late than never right (blah what a cheesy saying ha!)

Dark Lipsticks ♥

So if you are a follower of my blog (if so you are a babe!), you will know how much I have been LOVING dark lipsticks at the moment. I really ventured out of my comfort zone of only wearing Carmex, and started to wear lipstick … and now I feel SO bare without it!

My FAVES that have literally not left my on-the-go makeup bag are Rimmel’s 107 (middle)EVERY BLOGGERS FAVE – Well almost every :P, Make Up Revolution 100% Vamp (right), and Rimmel’s Moisture Renew Lipstick in Dark Night Waterl-Oops (left). Also guys – have you noticed my little owl tray and glass hearts? I bought them both from B&M – I am trying to improve my photography and add cute little random things in my pictures – I think they add something a little extra! Also I have a very wintery background going on too – which is wallpaper that I stole  took after asking nicely from B&M ;).

Anyway – all 3 lipsticks are SO PRETTY! When I don’t want a VERY dark lip, I will just stick to 107, but on other days, I will wear 107 as a base and then but either of the 2 darker lipsticks on top. I LOVE YOU DARK LIPS – is it still acceptable to wear dark lipstick in the summer? 😛

Where would we be in November without scarves? It definitely started to get a lot chillier this month.. so of course huge, furry scarves became a favourite of mine. The two that I have been loving the most is this tartan, blanket style one from Primark, which you can see styled HERE. It is basically just like having a blanket round your shoulders, and is just the best thing EVER! AND IT WAS ONLY £5 – PRIMARK WHERE WOULD I BE WITHOUT YOU! The next one is my faux fur scarf – you guys are probably sick to death of seeing this but I think I wore it with almost half my outfits in November! It has been a FIRM favourite this month :D.

This might be weird to some of you – but I have been loving clementines SO much this month! I think they really come into season around this time of year, so are SO YUMMY! I probably take around 3 to work and eat them all (haha!). When I was younger, my parents would put a clementine at the bottom of our stockings at Christmas time – I think it used to be some tradition.. anyone else heard of this?

Now this Barry M palette has been an absolute GEM this month – it has something for everyone – a gorgeous highlighter, bronzer, and 3 different blushers. The colours are so pigmented, and not too glittery at all. I can probably say it has been my most favourite product of ALL of November (woop!). It is so handy to have everything in one palette, and not be fiddling around in my make up bag for different products. Best of all, you can pick it up from Boots and Superdrug for ONLY £6.99! Now if that isn’t the bargain of the year – I DON’T KNOW WHAT IS! 😀

Now this candle has already made quite a few appearances on my blog .. so you probably know how much I LOVE it.. I have been burning it through the whole month of November and now it has ALMOST GONE! The smell literally is like a freshly baked apple pie .. so yummy! I will be getting a Christmassy one soon .. which I cannot wait for!

So there we have my November faves lovelies .. I hope you enjoyed this post! It is now actually later on in the evening .. I have had quite a busy day! I took my car on the motorway for the first time (eeeek!), and then on the way home I popped to TK Maxx and B&M, and then stopped at KFC for some food! Phew! By the way guys TK Maxx have THE BEST house/kitchen stuff ever… especially at this time of year! If you have not already been I suggest you go and take a look .. sometimes you do have to look quite hard but that’s when you find the AMAZING THINGS! I bought something for a very exciting and festive post which I cannot wait to put up during the week! So make sure you check back on my blog angels!

Right lovelies… that is me done with this post – I am now going to do some laundry, maybe take some blog photos and then just relax! This weekend has gone by way too fast for my liking – I feel like I have not had any time to relax at all! Saturday was spent in Manchester, and Sunday was spent doing lots of shopping! I may have a Lush bath later on… I think I deserve it!

A Day Spent in Holmfirth

Happy Saturday loves!

Hope you have all had a lovely week :). Mine, as usual was spent working and blogging! Yesterday (Friday night), we normally have a takeaway night in, but we actually decided to go out for dinner for a change which is always nice! I actually felt so tired after, and ending sleeping as soon as we got home (whoops!), and woke up at around 11:30pm (crazy Friday night I know :P). I then stayed up for a while and caught up on some blogs, then went back to bed! As I am sure you all know, napping at that time is never a good idea – and resulting in me waking up at 5:30am on Saturday morning, not being able to go back to sleep! So here I am… writing a blog post 🙂

So.. this is going to be a fashion/life catch up post – updating you guys on what I got up to last weekend, and showing my outfit! Now, I am the type of person who loves finding new, cute places to explore, and living in Yorkshire, there are definitely plenty of little villages to have a wander round! So, we googled a few places, and drove on!

We actually ended up in a village called Holmfirth, which ended up being SUCH  a beautiful, picturesque place. It had SO many little shops and cafes, and was surrounded by the gorgeous countryside! The first shop we went into was AMAZING! It was hidden in a little corner near the canal, and was a vintage furniture shop (I have already decided that when we buy a house I want to buy ALL of my furniture from there).

I am a lover of all things vintage, so love going in to shops like this, as well as charity shops and boot sales (where you can always find something special!)

We then drove to the actual village of Holmfirth, and had a mooch around the shops there (which I must say were just as amazing!) – and then found the cutest little cafe to have some lunch in!

I had a hot chocolate and some homemade crepes, which were SO GOOD. My mum also ordered an amazing platter, which came with 3 bean salsa, hummus, salad and some pitta bread. It was so yummy – I cannot recommend this little cafe enough. The lady that worked there was one of the nicest people I have ever met, and she was so welcoming – I will definitely be visiting it again. The cafe is called “En Route” Cafe – if you are ever around the Holmfirth area, I suggest popping in for a coffee and cake :). At the time, it was also decorated amazingly for Halloween/Autumn, so I can only imagine it will look beautiful around Christmas time :D.

We then went for a walk around the countryside, a quick drive around the village, before heading back home! It was a lovely way to spend a Sunday – we are going to try and make this a weekly thing, as it is always lovely to venture out into a city/village you have never been and see what it has to offer!

So.. onto the outfit itself.. On Saturday, I had a quick shopping trip, and picked up the most beautiful midi skirts from Primark (I will feature my purchases in my next blog post). I am a huge fan of midi skirts – although a few years back I did not dare wear them as I though I looked like a business women (I blame my age at the time :P). Now that I am slightly older (and wiser, tehehe), I think they are an amazing piece to have in your wardrobe. They definitely add an elegant look to an outfit, but I also will be pairing it with a graphic tee and some converse on casual days!

The skirt is in the most beautiful burgundy shade, and is knitted too! I prefer this so much for the colder months, compared to the standard cotton style. I paired it with my fuzzy jumper which you have seen before (I loved the mix of textures), some black ankle boots, and a patterned hijab. As it got colder later on, I added my over-sized blazer. I wore Rimmel 107 on my lips, and my usual winged liner!

Halloween Cupcakes

Hi Darlings! 

How are you all? Hope you have all had a lovely week so far, and are all getting in to the Halloween spirit! I have carved pumpkins, bought some decorations for my desk at work, and of course done some baking! I LOVED the look of other bloggers cupcakes, and just felt so inspired to make my own. So, after work, I drove to B&M and Home Bargains (both of these stores are EXCELLENT for Halloween decorations and treats, and everything is super cheap too!), and picked up some bits up for my cupcakes!

Now, I have to admit, I do love baking but it is very rare that I actually put time aside to do it. However, I thought Halloween would be the perfect opportunity to make some really fun cupcakes! They were also so quick to make, and very easy too! Soo… Lets get on to the recipe 🙂

Also, this recipe made 12 cupcakes 🙂

Cupcakes:

  • 200 ml Water
  • 85 g Butter
  • 85 g Caster Sugar
  • 1 tbsp Golden Syrup
  • 3 tbsp Milk
  • 1 tsp Vanilla Extract
  • 1 tsp Bicarbonate of Soda
  • 225 g Plain Flour
  • 2 tbsp Plain Cocoa

Buttercream Frosting :

  • 6 tbsp Butter (softened)
  • 175 g Icing Sugar
  • 1 tbsp Milk
  • 2-3 drops Vanilla Essence
  • few drops of food colouring (orange and green)

Decorations:

  • Halloween inspired cupcake cases
  • Chocolate Sprinkles
  • Halloween decorations (chocolate coins, halloween iced toppings)

Instructions:

Preheat oven to 180 degrees/gas mark 4. Line your cupcake pan with 12 cupcake cases.

Add the water, butter, sugar and syrup to a saucepan over medium heat and stir gently, until the sugar has dissolved. Once it has started to boil slightly, reduce the heat and let it simmer for 5 minutes. Then, leave this to cool.

After, place the milk and vanilla extract in a small bowl, and add the bicarbonate of soda. Stir to dissolve.

In a separate bowl, sift the flour and cocoa, and then add the syrup mixture and the milk mixture. Beat until it is smooth. Using an ice cream scoop, spoon the mixture into the cases.

Bake in the oven for 20 minutes (do keep a eye on them), and take out once they have risen well and are firm to touch. Leave to cool.

Whilst you are waiting for the cupcakes to cool, it is time to make the frosting. Put the butter in a bowl and beat until it is fluffy. Sift in the icing sugar and beat together well, adding in the milk and vanilla essence. Then separate the frosting in to two bowls, adding green food colouring to one, and orange to the other. Stir well.

Place the frosting in two separate piping bags, and pipe half the cupcakes with orange frosting, and the other half with green (or however you like). Then, add the Halloween chocolate coins to some, the icing decorations to the others, and a sprinkling of chocolate sprinkles to each one!

And that is all! See, told you they were easy and quick! They do look so amazing. I love the chocolate coins so much :), they really added so much to the cupcakes. I really hope you give these a go, they tasted like mini chocolate fudge cakes! I took some for the girls at work, who all complimented them, which is always a plus!
