Pancake Day: Fluffy Pancake Recipe

So, after umming for ages about whether I should do a pancake recipe or not, I just thought why the hell not (ha). I am so so excited for Pancake Day because I LOVE pancakes so so much. Unfortunately for me.. I can’t wake up to make yummy pancakes for breakfast as I leave for work at 7:30am every morning.. and despite me loving pancakes A LOT, I don’t fancy waking up earlier than I need to for them (I think I love my sleep more, hehe). I’ll definitely be making them once I get home though 🙂

 

So… when it comes to pancakes I definitely have more of a sweet tooth (I just don’t understand savoury pancakes).. so I am always drawn to sweet pancake recipes. Now .. let me tell you I have tried my fair share of pancake recipes BUT I have finally found my perfect one! It’s all about trial and error (plus LOTS of practise) when making the perfect pancake… so don’t worry if you can’t get it right the first time!

 

So guys .. I’m going to share the best recipe I have found for the fluffiest, softest sweet pancakes EVER. All credit goes to The Sweetest Journey – thank you SO MUCH for the recipe!

  

Makes around 20-25 pancakes (depending on how big you make them) – you can half the recipe if you’re not making that many! I made them for all the family so needed plenty.

3 cups of flour

6 tablespoons of sugar

3 teaspoons of baking powder

1 teaspoon of salt

4 eggs

2 cups of milk

4 tablespoons of melted butter

2 teaspoons of vanilla extract

Method

So guys .. the usual .. add all the dry ingredients into a bowl and mix together! TIP: I like to sift in my flour.. it means there are no unnecessary lumps!

Next, beat the eggs together, and add the milk, melted butter & vanilla extract and whisk together

Make a well in the dry ingredients and slowly add the wet ingredients. Use a spatula to mix together (don’t mix too much as you want to keep as much air in!). Also – sifting the flour earlier means there shouldn’t be too many lumps. TIP: if your mixture is too thick, add a splash of milk.

Now – this is the part where most people struggle. You need a non-stick pan (I use a Tefal one – it’s the BEST).. and also use a ladle to measure out your mixture (so you don’t get too much) and I find this also helps them stay round.

SO – I thought I’d be helpful to give you step by step instructions on how I make each of them perfectly golden and fluffy.

  • Have your pan on low/medium heat and leave for a minute or so to get to the correct temperature
  • Put some melted better/cooking spray on you pan (this is what gives them that golden colour)
  • Use half a ladle of mixture and pour it onto the pan.
  • LEAVE it be for a minute, or until you notice bubbles on the top and the edges starting to rise. This shouldn’t take longer than 2 minutes (any longer and they’ll burn!)
  • Flip the pancake and leave for another minute (maximum minute and a half)
  • I like to keep them in the oven once done (one slow heat) so they stay warm whilst I prepare all my others)

And that’s it guys! Then.. go crazy with the toppings. My fave: Nutella and strawberries 🙂

Hiya lovelies!♥

IT IS THE LONG EASTER WEEKEND WOOP! Now… I would be EVEN more excited for this if I had not already been off for the whole week (haha!). Do you have any plans for the long weekend? All I know is that the weather is going to be poopy where I am (grr!).. So we will just have to see how the weekend pans out! ALSO… YES to the clocks changing… this means MORE DAYLIGHT WOOP! Which for us bloggers is THE DREAM. However.. for the lazy people (i.e. me).. it means we lose an hour in bed (no no no!).

Anyways darlings… I know you have probably seen SO many Easter themed posts.. SO I wanted to mix it up slightly…. so I decided to post what MY EASTER ESSENTIALS ARE! Now.. by this I mean little things that I feel EVERYBODY associates with Easter time!! This includes Easter treats & beauty bits too! So angels.. let’s have a quick look!!!!

I think almost every single person must have made these AT LEAST ONCE!! They are literally the EASIEST thing to make and look SO SO CUTE!! How nostalgic do these make you feel?! They would ALWAYS be in every baking fair/sale at school AND I am sure you and your mum/older siblings would always make them around Easter time!

All you need for these:

  • 200g Cornflakes
  • 75g Butter
  • 200g Milk Chocolate
  • 4 tbsp Golden Syrup
  • Mini Eggs

Method:

Melt all the ingredients. Mix in with the cornflakes and put into cupcake cases. Top with 2 (or more!) mini eggs. Leave to set.. and enjoy!!

There is just something ABOUT pastels that just MEANS Spring time is near!!! I absolutely LOVE this pastel pink colour from Barry M for spring/Easter inspired nails! Also.. nothing like a pop of orange to show you are well and truly ready for the warmer months! This beautiful colour is by Ciate London Olivia Palermo range in the colour “My Haute Vacation Coral” It would look SO beautiful on your toes too! So.. if you are lucky enough to get some sun on the Bank Holiday… pull out your sandals from the back of your wardrobe, give yourself a well deserved (and needed!) pedicure.. and rock bright nails! Yay!!

I have been so so impressed with the Lush Easter range this year.. HOW ADORABLE ARE THE BUNCH OF CARROTS!!!! I was lucky enough to be invited to a Lush event (full post will be coming soon!).. and just looking at the range they have.. I LOVED EVERY SINGLE THING!!! I have already mentioned how much I LOVE the Bouncy Bunny shower jelly too…. IT IS THE BEST!!!

Right guys.. the two types of eggs I am talking about are: Chocolate Eggs and Lush Bath Bomb Eggs. Firstly… it would not even be Easter time if you didn’t demolish at least 1 bag of mini eggs (all by yourself may I add – no sharing required). AND… all of you are allowed to have ONE GIANT EASTER EGG!  ALSO… for all us Lush/bath lovers… you have a LOVELY selection of easter egg bath bombs to choose from! From the GLITTERY AS ANYTHING Golden Egg (which is an absolute BEAUTY.. Quick Review of Golden Egg♥

I used this beauty in the bath recently.. so thought I would give you a SUPER QUICK REVIEW! Firstly.. if you do not like glittery baths.. you are best avoiding this as it is SO GLITTERY! I LOVE THEM THOUGH.. so was so excited to use this!! Once it is in the bath.. the water is FILLED with glitter.. and it starts to fizz away slowly. The scent is probably my FAVOURITE thing about it.. it smells like toffee/caramel/chocolate.. SO YUMMY!! Once the Golden Egg has finished melting.. you are left with the the most glittery, beautiful smelling, silkiest bath water EVER! I DID not want to leave my bath! The scent lasts on your skin for so long after you get out too.. which is FAB! I also did not need to moisturize after.. which is always a plus!

Let’s Travel to: Whitby♥

Happy Sunday Lovelies!

Hope you have all had an AMAZING weekend! If you follow my Twitter/read my blog .. you will know that I actually got my marriage registered this weekend (EEEEEEK!). It really was SUCH an amazing day … and it feels weird thinking that I am now a Mrs…my little brother said I am now officially old (wonderful ha!).

The last week at work just FLEW BY! I cannot get over how quickly Friday came round! I sometimes can’t believe how fast days just pass you by .. this is why I try and make the most of each of them! This was one of the reasons we took a last minute trip to Whitby last weekend! Anyway loves .. have a read on and I ‘ll tell you all about my trip there!

RIGHT ….. so my and my family were all just sat downstairs on New Year’s day .. when my husband actually came up with the idea of going to stay in a cottage for the weekend.. it really was a pretty random and last minute trip! We searched the internet and found a few cottages that had places for the next day … and the next morning my dad received a call that a cottage in Whitby was available with enough room for 8 of us (and a baby!)… so we loaded the cars with everything we needed.. and off we went!

It took around 2 hours to get there … and the cottage itself was AMAZING! I was kicking myself that I didn’t bring more outfits so I could take pictures.. as the background was STUNNING! Anyway loves.. speaking of outfits.. I will show you what I wore on the first day!

Now… we already knew the weather would be cold/windy/rainy… so my outfits were focused on keeping warm. I ALWAYS layer like a crazy .. as well as having an umbrella on me all the time (and it DEFINITELY came on handy on this trip hehe!).

So here was my outfit for the first day loves….

You have probably seen every single piece of clothing in other OOTD’s too ha! The tartan scarf and top are both from Primark and get SO MUCH WEAR! The over-sized black blazer is New Look .. but of course you can pick these up ANYWHERE. My boots are very old, and have now become my “walking boots”… they are SO comfortable and also kept my feet dry whilst walking on the beach! Of course… to add something to the look.. I added Rimmel’s 107, as you do :P. My bag is also from LYDC London (you have all seen it before too!)… it is just amazing at fitting everything that I need in AND keeping it organized (woop!).

Saturday♥:

So on our first day ….. we settled into the cottage, then went out to pick up snacks from the local Sainsburys, which was SO handy as it was only 2 minutes down the road! We then drove down to the marina and walked around the shops, picked up some fish and chips for dinner (how could we not!!).. and then headed back to the cottage! After… we played a few games .. and then as it got past midnight, my husband suggested we go out for a drive around Whitby. Now.. I don’t know if you have ever been.. but I found there was something SO EERIE about the whole place at night. The cottage that we were staying at was in the middle of nowhere, so it was TERRIFYING to go out alone when it was dark. The roads were SO QUIET and the Abbey looked SO creepy…. I can definitely see why so many people come here at Halloween! Anyways .. after our scary drive.. we came home and fell straight asleep!

Sunday♥:

On Sunday … we all had breakfast together, before going to see all the chickens that the landowner had in his gardens! My little niece is the biggest animal lover EVER.. so she definitely enjoyed this bit! Then we cleaned the cottage, packed our things up .. and headed to the beach! The beach at this time of year was FREEZING as you can imagine… but we still had lots of fun! We then drove over the marina again and stopped to get some fresh doughnuts/waffles, and then also drove up to the Abbey (which wasn’t as creepy during the day!). After, it was time to head back home… we stopped at York on the way for some food … as we were all starving by that time!

Quick look at the outfit for Sunday .. if you notice all I actually did was change the top HA! I did pack another cardigan, but didn’t like how it looked… so I stuck to my trusty blazer! I LOVED how comfortable I felt in both these outfits..  and think that this is the most important thing when you know you’re going to be doing lots of walking outside.

After stopping at York.. it took around an hour to get home.. we then unpacked, went to sleep.. and were all up for work on Monday ! PHEW … busy weekend ey!

So lovelies.. that was my overnight stay in Whitby! I am such a HUGE lover of last minute, spontaneous trips.. they make such great memories too! I definitely recommend staying in a cottage for a few days .. it is so nice to get away from life in the city and just have a few relaxing days, especially after the busy festive period!

Soooo … what am I doing for the rest of the day?I will be spending my Sunday writing up some posts, doing my laundry and just CHILLING out in my PJ’S before work tomorrow! Hope you enjoyed this little insight into my trip angels.. and do let me know if you have ever been to Whitby!

How to: Perfect Christmassy Afternoon♥

Hi my lovelies!

Hope you have all had an amazing weekend! I woke up to no rain today (YAY)… meaning I can take my outfit pictures!! I have also been a little busy this weekend organizing our registry office “wedding”… Me and my hubby have already had our “main” wedding day and our Nikkah done (the Islamic ceremony of marriage).. but we are just not registered yet.. so we will be having that done in January next year! Very exciting times!

Anyway….. I HAVE A VERY FESTIVE POST FOR YOU. I have been planning this post for SO long and am so excited to finally put it up! It is how to have the PERFECT Christmassy afternoon/evening, with festive themed baking, drinks, baths and pamper ideas! It is the perfect afternoon to have in the run up to Christmas, especially on a weekend! Eeeeek I am literally so exciting for you to see this post … And I really hope you try the ideas!

So, put aside a few hours, get some Christmas music playing, and lets have the PERFECT CHRISTMASSY AFTERNOON!

The first thing that I think is SO MUCH FUN at this time of year is to do some BAKING! I am not a huge fan of mince pies (wish I was though!).. so I tend to avoid baking things with fruit in them.. I am however a HUGE fan of any vanilla/chocolate cupcakes! I thought I would make some standard vanilla cupcakes, but make it festive with different types of frosting and decoration. I also added some sprinkles into the cake mix (hehe!)

Recipe for Cupcakes:

Makes 24

  • 225g Butter (softened)
  • 225g Caster Sugar
  • 1 tsp Vanilla Essence
  • 4 Large Eggs
  • 225g Self-Raising Flour
  • 5 tbsp Milk
  • Sprinkles (optional) – as many as you want!
  • Lots of Christmassy sprinkles/decorations

Method:

Put 24 red cake cases in muffin pans

Pre-heat the oven to 180ºC/Gas Mark 4. Put the butter, sugar and vanilla essence in a bowl and beat together until light and fluffy. Then, add one egg at a time, beating the mixture well after each one. Sift the flour in and fold into the mixture with the milk. If you want to, add the sprinkles in at this stage and mix well. Then, spoon the mixture into the 24 paper cases. Bake for 15-20 minutes, or until well risen. Put onto a wire rack and leave to cool for at leas 20 minutes.

Frosting!

Now, I actually had 4 differant types of frosting. I firstly made some basic buttercream frosting:

Ingredients:

  • 175g Unsalted Buteer
  • 350g Icing Sugar
  • Milk (if required) 1-2tsps

Method: 

Put the butter in a bowl and beat until fluffy. Sift the icing sugar in and beat together until it is well mixed. If the frosting is quite thick, add in the milk. Separate into 3 bowls

Peppermint Frosting:

Add 2 candy canes (crushed) into the frosting (make sure they are TINY.. if the pieces are too big, you will NOT be able to pipe (TRUST ME IT HAPPENED TO ME!). Put the frosting into a piping bag and use a medium star-shaped nozzle. Pipe onto the cupcakes and sprinkle more crushed candy canes on top!

Cinnamon Frosting:

Sprinkle a TINY amount of cinnamon into the frosting and mix well. Put in the piping bag and pipe the frosting on. Then, sprinkle some cinnamon sugar (sugar mixed with cinnamon) onto the top of the cupcake, and then place some edible gingerbread men on the top! I LOVE THESE! The gingerbread men are from TK Maxx and they are the cutest things I’ve ever seen!

Chocolate Frosting

Add 2 tbsp of cocoa powder to the frosting and mix well. Add to the piping bag and pipe onto the cakes. Sprinkle crushed candy canes on some, and add the edible sugar decorations on others. Then, sift some icing sugar on the top to make it look like snow! ADORABLE!

Green Frosting

I cheated as this was ready made hehe! Just pipe it onto the cupcakes and add the edible sugar decorations on them.

So there you have it! Vanilla cupcakes with different types of frosting .. these are just some examples that you can try but there really are so many variations .. so get creative my loves! YOU WILL HAVE SO MUCH FUN!

Wow.. I bet all that baking tired you out! What better thing to do than have a… LUSH BATH!♥ Before we start to run our bath, I want to show you how you can make the yummiest smelling body scrub EVER! It is so perfect for this time of year.. as it is a WHIPPED GINGERBREAD SCRUB!

HOW TO: Whipped Gingerbread Scrub

You will need:

  • 1/2 cup of brown sugar
  • 1/2 cup of demera sugar
  • 1/2 cup coconut oil
  • 1tsp vanilla essence
  • 1/2 tsp cinnamon and nutmeg
  • 1/2 tsp fresh ginger (grated)
  • Gingerbread sprinkles

Put the sugars and oil in a bowl, and use an electric whisk until it is a whipped consistency. Add the spices, ginger and vanilla and whisk until they are blended in. Add to a cute jar, top with little gingerbread sprinkles… and you’re done! All set to use during your bath!

Quick disclaimer: as this scrub has cinnamon and nutmeg (spices), it may irritate those with sensitive skin. I recommend ALWAYS doing a patch test, with ANY homemade scrub.. I also WOULD NOT recommend this one for your face lovelies.. I think you can guess why :P. If you want some DIY masks that are gentler, have a read of my blog post HERE

 Lush Bath♥

YES.. you knew this would be fitted into our Christmassy afternoon :D. You know the drill guys… lots of candles, face masks, scrubs and some magazines! My FAVOURITE bath bombs to use are Yog Nog and Lord of Misrule.. but you can use WHICHEVER ones you like angels!

Bet your’re feeling pretty good after your bath right! Now it’s time to put on your coziest PJ’s and make a hot chocolate (check out my blog post HERE for some yummy ideas!)

It is now time to relax… you can put some Christmas movies on and start to wrap your presents!

A Day Spent in Holmfirth

Happy Saturday loves!

Hope you have all had a lovely week :). Mine, as usual was spent working and blogging! Yesterday (Friday night), we normally have a takeaway night in, but we actually decided to go out for dinner for a change which is always nice! I actually felt so tired after, and ending sleeping as soon as we got home (whoops!), and woke up at around 11:30pm (crazy Friday night I know :P). I then stayed up for a while and caught up on some blogs, then went back to bed! As I am sure you all know, napping at that time is never a good idea – and resulting in me waking up at 5:30am on Saturday morning, not being able to go back to sleep! So here I am… writing a blog post 🙂

So.. this is going to be a fashion/life catch up post – updating you guys on what I got up to last weekend, and showing my outfit! Now, I am the type of person who loves finding new, cute places to explore, and living in Yorkshire, there are definitely plenty of little villages to have a wander round! So, we googled a few places, and drove on!

We actually ended up in a village called Holmfirth, which ended up being SUCH  a beautiful, picturesque place. It had SO many little shops and cafes, and was surrounded by the gorgeous countryside! The first shop we went into was AMAZING! It was hidden in a little corner near the canal, and was a vintage furniture shop (I have already decided that when we buy a house I want to buy ALL of my furniture from there).

I am a lover of all things vintage, so love going in to shops like this, as well as charity shops and boot sales (where you can always find something special!)

We then drove to the actual village of Holmfirth, and had a mooch around the shops there (which I must say were just as amazing!) – and then found the cutest little cafe to have some lunch in!

I had a hot chocolate and some homemade crepes, which were SO GOOD. My mum also ordered an amazing platter, which came with 3 bean salsa, hummus, salad and some pitta bread. It was so yummy – I cannot recommend this little cafe enough. The lady that worked there was one of the nicest people I have ever met, and she was so welcoming – I will definitely be visiting it again. The cafe is called “En Route” Cafe – if you are ever around the Holmfirth area, I suggest popping in for a coffee and cake :). At the time, it was also decorated amazingly for Halloween/Autumn, so I can only imagine it will look beautiful around Christmas time :D.

We then went for a walk around the countryside, a quick drive around the village, before heading back home! It was a lovely way to spend a Sunday – we are going to try and make this a weekly thing, as it is always lovely to venture out into a city/village you have never been and see what it has to offer!

So.. onto the outfit itself.. On Saturday, I had a quick shopping trip, and picked up the most beautiful midi skirts from Primark (I will feature my purchases in my next blog post). I am a huge fan of midi skirts – although a few years back I did not dare wear them as I though I looked like a business women (I blame my age at the time :P). Now that I am slightly older (and wiser, tehehe), I think they are an amazing piece to have in your wardrobe. They definitely add an elegant look to an outfit, but I also will be pairing it with a graphic tee and some converse on casual days!

The skirt is in the most beautiful burgundy shade, and is knitted too! I prefer this so much for the colder months, compared to the standard cotton style. I paired it with my fuzzy jumper which you have seen before (I loved the mix of textures), some black ankle boots, and a patterned hijab. As it got colder later on, I added my over-sized blazer. I wore Rimmel 107 on my lips, and my usual winged liner!

Lush Goodies & Candles :)

Hi there angels 🙂

I hope you have all had a lovely Saturday! Can you believe that we are in October?! I absolutely love the month of October, as I feel this is when Autumn really starts :). I also hope your week has been amazing, whatever you have been up to! This morning, I gave my car in for MOT, and then me, my husband, brother, sister and baby niece drove to Whiterose Shopping Centre for an afternoon out!

Soo.. I have been looking forward to this weekend for quite a while, as this was when the Lush Christmas and Halloween goodies arrived in store! I know there were so many of you who were just as excited.. and I could not wait to put up a post showing you guys my picks!

Now I have to admit, I was quite sensible and did not buy everything in the shop at once(even though my heart wanted this), as I want to actually use the products quickly, and once they are used, go out and buy more (hehehe). So, I picked the select few that I had been wanting to get my hands on for the longest time! I also have a few that I will pick up on later trips, such as Golden Wonder bath bomb and Fairy Dust (which I regret not picking up – I sprinkled it on my arm in store today and I can STILL smell it!).

So.. lets see what was in my Lush basket …

I told you I was sensible! They have some absolutely amazing things this year, and things on my next wishlist include Bar Humbug bubble bar, Salt and Peppermint Bark scrub, Luxury Lush Pud bath bomb and the Fairy Dust powder! By the way, the “Dirty” hair cream was for my husband :).

Lets talk some more about these amazing products :D..

I cannot even tell you guys how excited I was when Lush revealed they would be releasing a “Yog Nog” bath bomb – Last year I completely fell in love with the soap, and regretted not picking any more up when I had the chance. But then THIS BABY CAME INTO STORE! It smells exactly like the soap, if not a little “spicer”, but it still has that amazing sweet caramel undertone :D. I am probably the most excited to try this bath bomb (Ok, I am excited about everything new, but this probably a little more than the others, hehe).

I am so glad that Lush have made “Lord of Misrule” available everywhere now, as this is probably one of my most favourite scents ever. I have to say .. I left out buying the shower cream, as I didn’t think the scent was as strong as I had expected it to be.. Oh well, the bath bomb is amazing, and I definitely recommend this! It turns your water the most gorgeous deep red/maroony colour after, and is so much fun to watch, as it is a slow fizzer and goes from green to pinky/purple! Love it so much :).

Now, I don’t think The Experimenter is a Christmas goodie, but I could not resist picking it up.. after recommendations and having a demo of it in store, I needed it in my basket! It is one of the most colourful bath bombs ever, and I know I will have so much fun watching this one!

Oh yes… I finally got my hands on Snow Fairy! This smells absolutely divine, and I want to purchase Candy Mountain bubble bar and Fairy Dust powder, so I can match the scents and smell like marshmallows and candy all day :).

So.. they were my purchases from Lush… I love going there so much – the staff are so friendly and it is always an exciting experience when you discover something new, as there is so much stuff to choose from! Make sure you check out Lush, and have a good look at all their Christmas goodies, they really are amazing!

After my Lush trip, I was feeling very festive and “autumnal” – if that is even a word, so wanted to see if I could pick up a candle that would become my signature scent for this season. Oh my goodness, I found the perfect one!

This is “Hot Apple Pie” by Mia Bella Candles … guys I cannot even tell you how AMAZING this smells, it literally smells exactly like the name, and just reminded me so much of Autumn! The sales assistants are literally the nicest ladies ever – I picked mine up from their stall at the Whiterose Shopping Centre in Leeds – make sure you check them out if you are ever there! It cost £12.99, which I think is reasonable – I had it burning about an hour ago, and I can still smell it on the way upstairs and in my room! They are also paraffin free and don’t release soot, so are really clean to burn. I cannot recommend them enough, check them out on http://www.miabellacandles.co.uk  🙂

So, we then had lunch at “Handmade Burger” – it was my first time there and the food was absolutely delicious! I had the Peri Peri Chicken Pitta and seasoned fries (yummy!) – also guys the Handmade Burger in Whiterose provides Halal chicken if you request it :).

And that is what I got up to this afternoon! I have been so excited all week for this blog post to go up.. so I really hope you enjoy reading it! I have also taken some more outfit pictures which will be up in a later post – as well as choosing some things/products for a September Favourites post, which everybody has been doing, and inspired me too :). I will also have the DIY beauty post up soon, which I am very excited to share with you!

So, I am now going to enjoy my mums cooking (she has made brown rice and chicken curry – yum!), and then watch TV, and catch up on some amazing blogs! Love my wild Saturday nights ;).
